Raisin Anise Pralines
|Granulated sugar||1 1⁄2 Cup (24 tbs)|
|Packed brown sugar||1 1⁄2 Cup (24 tbs)|
|Whipping cream||1 Cup (16 tbs)|
|Light raisins||1 1⁄2 Cup (24 tbs)|
Butter the sides of a heavy 3 quart saucepan.
Stir together sugar, brown sugar, and cream in the saucepan.
Bring to boiling over medium heat, stirring frequently.
Cook to 234Â° (soft-ball stage), about 2 to 5 minutes, stirring only as necessary to prevent sticking.
Remove from heat; do not stir.
Let stand about 30 minutes or till mixture cools to 150Â°.
Meanwhile, combine raisins and liqueur; set aside.
When candy mixture reaches 150Â°, stir in raisin mixture.
Beat about 5 minutes or till thick and glossy.
Drop candy from a tablespoon onto a baking sheet lined with waxed paper.
If candy becomes too stiff, stir in a few drops hot water.
