Raisin Anise Pralines's picture
Raisin anise pralines are sweet little candied pralines made with raisins and flavored with anise. Cooked with whipping cream and brown sugar mix, the raisin anise praline is a real hit with kids and adults alike!
  Granulated sugar 1 1⁄2 Cup (24 tbs)
  Packed brown sugar 1 1⁄2 Cup (24 tbs)
  Whipping cream 1 Cup (16 tbs)
  Light raisins 1 1⁄2 Cup (24 tbs)
  Anisette 3 Tablespoon

Butter the sides of a heavy 3 quart saucepan.
Stir together sugar, brown sugar, and cream in the saucepan.
Bring to boiling over medium heat, stirring frequently.
Cook to 234° (soft-ball stage), about 2 to 5 minutes, stirring only as necessary to prevent sticking.
Remove from heat; do not stir.
Let stand about 30 minutes or till mixture cools to 150°.
Meanwhile, combine raisins and liqueur; set aside.
When candy mixture reaches 150°, stir in raisin mixture.
Beat about 5 minutes or till thick and glossy.
Drop candy from a tablespoon onto a baking sheet lined with waxed paper.
If candy becomes too stiff, stir in a few drops hot water.
