Fish Casserole With Saffron
|Fish fillets||3 Pound (Use Any Variety)|
|Garlic||1 Clove (5 gm), minced|
|Onion||1 Large, sliced|
|Green pepper||1 , chopped|
|Stock||3 Cup (48 tbs)|
|Potatoes||4 , pared and thinly sliced|
Sprinkle fish with 1 teaspoon salt.
Reserve; saute garlic, onion, and green pepper in oil in saucepan until tender.
Add saffron, stock, peppercorns, and remaining salt.
Bring to a boil.
Place layer of potatoes in greased 3-quart casserole; top with layer of fish.
Repeat with remaining potatoes and fish.
Add stock mixture; bake uncovered at 350Â° for 40 minutes, or until fish is easily flaked with a fork and still moist
