Saffron Haddock

Ingredients
  Haddock fillets 1 Pound
  Saffron threads 1⁄8 Teaspoon
  Butter 1 Tablespoon
  Coriander 1 Teaspoon
  Tomato paste 2 Teaspoon
  Onions 1 Medium, sliced into wheels
  Lemon 1 Small, juiced, large strips of peel
Directions

GETTING READY
1) Clean, rinse and pat dry haddock.
2) Soak saffron in a tablespoon of water.

MAKING
3) Mix together butter, coriander and tomato paste together.
4) Take a casserole dish and layer half the onion and lemon peel in it. Place haddock over it.
5) Apply the paste of saffron and tomato over it and put another layer of onions. Cover the dish with a lid or a foil.
6) Bake it for 25-30 minutes at 350 degrees.
SERVING
7) Serve saffron haddock hot.
