Roasted Pineapple With Cayenne And Allspice
|Pineapple||1 (peeled, cored)|
|Canola oil||1 1⁄2 Teaspoon|
|Allspice||1⁄4 Teaspoon, ground|
|Lime juice||1 Tablespoon (fresh)|
1 Preheat the oven to 500°F. Spray a large baking sheet with nonstick spray.
2 Cut the pineapple lengthwise into 16 thin wedges. Lightly brush both sides of each wedge with the oil; sprinkle with the allspice and cayenne.
3 Place the pineapple, curved side down, on the baking sheet. Roast until tender, about 12 minutes. Remove the pineapple from the oven; increase the oven temperature to broil. Brush the pineapple with the lime juice and broil 5 inches from the heat until lightly browned on the edges, 1-2 minutes.
