Zucchini With Corn & Peppers
|Zucchini||1 1⁄2 Pound, cut into 1/2 inch cubes|
|Uncooked corn/One 10 ounce package frozen corn, thawed||1 1⁄2 Cup (24 tbs), cut from 3 ears|
|Green bell pepper||To Taste, seeded and chopped|
|Onion||1 Medium, chopped|
|Garlic||1 Clove (5 gm), minced or pressed|
Melt butter in a wide frying pan over medium-high heat.
Add zucchini, corn, bell pepper, onion, and garlic.
Cook, stirring frequently, until most of vegetable liquid has evaporated and vegetables are crisp-tender (about 5 minutes).
Add salt and pepper to taste.
