Saffron Poached Apples with Maple Mascarpone
Place water butter 2 tablespoons sugar and salt in medium saucepan bring to a boil over high heat. Remove from heat add flour. Beat with spoon until dough forms ball and releases from side of pan. Vigorously beat in eggs 1 at a time until mixture is smooth.
Stir together flour baking powder and salt. Cut in shortening till mixture resembles cornmeal. Slowly add water stir with a fork dough will be crumbly . Turn onto a floured surface knead into a smooth ball. Divide dough in half cover and let stand 10 minutes.
Preheat oven to 425 . Mix butter with sugar and cinnamon. Separately beat eggs with grated lemon rind until foamy. Grind almonds to fine paste in electric blender or mortar. Add all but 14 cup almonds and beaten eggs to butter and sugar mixture reserve
