Ingredients
  Beef kidneys 6 (3 pairs)
  Lamb kidneys/Pork kidneys 6 (adjust quantity as needed)
  Tomato slices 6
  Bacon slices 6 (adjust quantity as needed)
Directions

GETTING READY
1.Start by cutting the beef kidney into 6 pieces or split open lamb or pork kidneys
2.Also remove tubes and fat
MAKING
3.In a bowl, soak in cold water for 30 minutes
4.In a greased frying pan, arrange tomato slices, place a piece of kidney on each slice and a piece of bacon on each kidney
5.Broil under moderate broiler heat, 10 to 15 minutes or until kidney is tender
6.Cover and simmer over direct heat 4 or 5 minutes
SERVING
7.Serve with a sauce of your choice
