Mama Sita Filipino-Style Escabeche

Ingredients
  Whole fish/Fillet 14 Ounce, cleaned
  Cooking oil 1⁄2 Cup (8 tbs)
  Sweet and sour sauce mix 57 Gram (Mama Sita's)
  Water 3⁄4 Cup (12 tbs)
  Thinly sliced ginger 1 Tablespoon
  Crushed garlic 3 Clove (15 gm)
  Thinly sliced carrots 1 Tablespoon
  Sliced red bell pepper 1 1⁄2 Tablespoon
  Sliced onion 1 1⁄2 Tablespoon
  Salt To Taste
Directions

Season fish with salt.
Fry in hot oil until crisp and golden brown.
Saute ginger, garlic. onions, carrots and bell pepper.
Pour dissolved Mama Sita's escabeche mix into sauted vegetables.
Bring to a boil. Simmer for 2 minutes.
Add fish and simmer for a minute.
Transfer it in a serving dish.
