Microwave Chicken And Sausage Paella
|Sausages||1⁄2 Pound, cut in 1/2 inch slices (250 Grams)|
|Onion||1 , chopped|
|Sweet green pepper||1 , chopped|
|Garlic||2 Clove (10 gm), minced|
|Long grain rice||250 Milliliter (1 Cup)|
|Tomatoes||1 Can (10 oz), chopped|
|Chicken stock||250 Milliliter (1 Cup)|
|Ground turmeric||1⁄2 Teaspoon|
|Cayenne pepper||1 Pinch|
|Boneless, skinless, chicken breasts||1 Pound, cut in 1 inch pieces (500 Grams)|
|Green onion||1 , chopped|
In 12 cup (3 L) microwaveable casserole, combine sausages, onion, green pepper and garlic; microwave, uncovered, at High for 4 to 6 minutes or until vegetables are softened, stirring twice.
Stir in rice, tomatoes, chicken stock, turmeric and cayenne pepper; cover and microwave at High for 8 to 10 minutes or until boiling.
Microwave at Medium (50%) for 5 minutes.
Stir in chicken; cover and microwave at Medium (50%) for 7 to 9 minutes or until rice is tender, chicken is no longer pink inside and most of the liquid has been absorbed.
Let stand, covered, for 5 minutes.
Season with salt and pepper to taste.
Sprinkle with chopped green onion.
