Spanish Bacon And Rice
|Bacon slices||6 , chopped|
|Long grain rice/Converted rice||1 Cup (16 tbs)|
|Hot tap water||1 1⁄2 Cup (24 tbs)|
|Tomato sauce||8 Ounce (1 Can)|
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Tomatoes||1 Pound (1 Can)|
|Black pepper||1⁄4 Teaspoon|
Place bacon in a 2 qt.glass casserole dish.
Cover and microwave 4 to 5 minutes or until crisp.
Remove bacon and set aside.
Drain off all but 2 tablespoons drippings.
Stir in remaining ingredients except bacon.
Cover and microwave 18 to 22 minutes.
Stir in bacon.
Cover and let stand 5 minutes before serving.
