Haddock Spanish Style
|Haddock fillets||2 1⁄2 Pound|
|Salt||1 1⁄2 Teaspoon|
|Black pepper||1⁄2 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
|Lemon juice||4 Tablespoon|
|Onions||3 Large, sliced|
|Tomatoes||6 Large, sliced|
|Minced parsley||2 Tablespoon|
|Olive oil||1⁄2 Cup (8 tbs)|
Sprinkle fish with 1/2 teaspoon salt, pepper, garlic, and 2 tablespoons, lemon juice.
Let stand for 15 minutes; place in greased shallow baking dish.
Cover with layers of onions, tomatoes, and parsley, sprinkling with remaining salt.
Pour oil and remaining lemon juice over.
Bake, uncovered at 350Â° for 45 minutes, or until fish is easily flaked with a fork and still moist.
