Spanish Steak With Mashed Potatoes

The spanish steak is prepared with a round steak along with cheddar cheese. Cooked in the oven, the spanish steak is flavored with tomatoes and onions along with bacon drippings. Served with a platter of mashed potatoes and crisp veggies, the spanish steak makes a full and flavorful meal.
  Round steak 2 Pound (1 Inch Thick)
  Bacon drippings 4 Tablespoon
  Boiling water 3⁄4 Cup (12 tbs)
  Thinly sliced onions 1⁄4 Cup (4 tbs)
  Tomatoes 3 Can (30 oz)
  Grated cheddar cheese 1⁄4 Cup (4 tbs)
  Mashed potatoes 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste

Brown meat well on both sides in bacon drippings in Dutch oven or deep skillet; add boiling water.
Cover; bake for 45 minutes at 350 degrees.
Sprinkle with salt and pepper; cover meat with layer of onions.
Cover; return to oven for 30 minutes.
Sprinkle again with salt and pepper; cover with layer of tomatoes.
Cover; bake for 30 minutes more.
Sprinkle with grated cheese; return to oven until cheese melts.
Remove to heated platter; surround with mashed potatoes.
If desired, make gravy by thickening drippings with a little cornstarch; add a little Accent and cooking wine.
Pour gravy over meat and mashed potatoes.
