|Onion||1 Medium, peeled and quartered|
|Garlic||1 Clove (5 gm)|
|Green peppers||2 , seeded and quartered|
|Tomatoes||4 , peeled, seeds removed, quartered|
|Cucumber||1 , peeled and cut into pieces|
|Olive oil||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Tomato juice||2 Cup (32 tbs)|
|Dry sherry||1 Tablespoon|
Chop each of the vegetables separately until coarse in the processor bowl, with the metal blade.
Remove to a large jar.
Add salt and pepper, olive oil, lemon juice, tomato juice, and sherry and chill well.
Serve cold with a dollop of sour cream on top.
