Easy Spanish Rice
|Chopped green bell pepper||1⁄2 Cup (8 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Canned tomato sauce||8 Ounce|
|Canned stewed tomatoes||14 1⁄2 Ounce, undrained and chopped|
|Rice grain||1 Cup (16 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Chili powder||1 Teaspoon|
|Dried oregano||1⁄2 Teaspoon|
|Ground red pepper||1⁄4 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot.
Add bell pepper and onion; saute 5 minutes or until tender.
Add tomato sauce and remaining ingredients; bring to a boil.
Cover, reduce heat, and simmer 25 minutes or until rice is tender and liquid is absorbed.
