Fiesta Red Potatoes
|Red skinned potatoes||3⁄4 Pound, thinly sliced|
|Tomatoes||2 Medium, chopped|
|Green bell pepper||1 Medium, seeded and chopped|
|Scallions||3 , minced|
|Ground cumin||1⁄2 Teaspoon|
|Chili powder||1⁄2 Teaspoon|
|Dried oregano leaves||1⁄2 Teaspoon|
|Grated reduced fat cheddar cheese||2⁄3 Cup (10.67 tbs)|
Place potato slices and water in a shallow microwave-safe casserole.
Cover with vented plastic wrap and microwave on high for 6 minutes.
Let stand for 3 minutes.
Sprinkle potatoes with tomatoes, scallions, green pepper, cumin, chili powder, oregano, and cheese.
Cover with vented plastic wrap and microwave on medium for 3 minutes.
Remove plastic wrap and run casserole under the preheated broiler for 2 minutes or until lightly browned.
