|Olive oil||3 Tablespoon|
|Green pepper||1 , seeded, thinly sliced|
|Onion||1 , peeled, finely chopped|
|Tomato||1 , peeled, seeded and chopped|
|Garlic||1 Clove (5 gm), crushed|
|Freshly ground black pepper||1⁄8 Teaspoon|
Heat the oil in a skillet, add the green pepper and onion, and saute until the vegetables begin to soften.
Add tomato, garlic and seasoning, and simmer until the ingredients are soft and mushy.
Add the lightly beaten eggs and stir just enough to mix with the vegetables.
Cook for a few minutes until the eggs are just set.
Serve with toast or on thin sauted slices of ham.
