Gazpacho Salad With Herbs

Ingredients
  Tomatoes 2 Medium
  Cucumber 1 Medium
  Green pepper 1 Medium
  Stalk celery 1
  Chopped onion 1⁄4 Cup (4 tbs)
  Shallot 1
  Chopped parsley 1 Tablespoon
  Chopped ripe olives 1 Tablespoon
  Herbed dressing 1 Tablespoon
  Lettuce 1 Cup (16 tbs)
Directions

Combine first 8 ingredients in a 10- x 9- x 2-inch baking dish.
Pour Herbed Dressing over vegetables; toss gently.
Chill at least 2 hours.
Serve on lettuce leaves.
