Catalan Chicken

Ingredients
  Roasting chicken 4 Pound
  Olive oil 3 Tablespoon
  Salt 1 Teaspoon
  Onions 3 Medium
  Canned pimientos 4
  Tomatoes 2 Medium
  Tomato paste 2 Tablespoon
  Water 1⁄4 Cup (4 tbs)
  Dry sherry 1⁄4 Cup (4 tbs)
  Sugar 1⁄2 Teaspoon
Directions

In a large kettle, brown the chicken pieces in the olive oil with the salt.
Remove chicken and set aside.
Put the sliced onions in the pan and cook until soft.
Add all the remaining ingredients and bring to a boil; return chicken to kettle and simmer, covered, 35 to 40 minutes, or until fork-tender.
