Truchas al Jerez al Homo (Baked Trout with Sherry)
|Salad oil/Olive oil||3 Tablespoon|
|Bread crumbs||1 Cup (16 tbs)|
|Chopped parsley||3 Tablespoon|
|Garlic||1 Clove (5 gm)|
|Lemon juice||1⁄2 Teaspoon|
|Dry sherry||1⁄3 Cup (5.33 tbs)|
Rub fish with lemon, and season with salt and pepper.
Heat oil, and add bread crumbs, parsley and garlic.
Spread 1/2 the mixture on bottom of shallow baking pan.
Arrange fish on top, cover with remaining crumbs and sprinkle with lemon juice.
Bake in preheated 400Ã‚Â°F. oven 5 minutes.
Add sherry, and bake 10 minutes longer, basting occasionally, until fish flakes.
