|Peach||2 Cup (32 tbs), diced and divided|
|Cucumber||1 Cup (16 tbs), diced and divided|
|Onion||1⁄2 Cup (8 tbs), diced and divided|
|Tomatoes||1⁄2 Cup (8 tbs), diced and divided|
|Jalapeno||2 Tablespoon, diced and divided|
|Cilantro||1⁄2 Cup (8 tbs), chopped and divided|
|Fresh orange juice||1 Cup (16 tbs)|
|Fresh lime juice||2 Tablespoon|
1. In a mixing bowl take half quantity of all the ingredients – peach, cucumber, onion, tomatoes, jalapeno, cilantro, honey and cumin. Incorporate well.
2. Coarsely grind the mixture in the food processor.
3. Scrape out in a large bowl and add in left ingredients, mix well. Add in the orange juice and lime juice and incorporate well.
4. Serve Peach Gazpacho with croutons and enjoy!
