Gazpacho Soup

Patti Moreno, the Garden Girl, makes Gazpacho soup fresh from her garden. Gazpacho is a great cold soup, try a little taste of Spain!
Ingredients
  Heirloom tomatoes 3 Medium, juiced
  Parsley 10 Medium (only leaf)
  Basil 10 Medium (only leaf)
  Garlic clove 5 Medium
  Thai peppers 2 Medium, chopped
  Thai eggplant 1 Medium, diced
  Salt 1 Pinch
  Black peppercorn 1 Pinch, ground
Directions

MAKING
1) In a blender container, blend togther the parsley, basil and garlic.
2) Stir in this mixture into tomato juice and then add peppers and eggplant.
3) Sprinkle salt and pepper to taste and give it a good mix.

SERVING
4) Serve the gazpacho soup immediately or chilled.
