|Bulk pork sausage||1 1⁄2 Pound|
|Tomato juice||1 Can (10 oz) (No. 2)|
|Minced onions||1⁄2 Cup (8 tbs)|
|Minced green pepper||1⁄2 Cup (8 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Sugar||1 1⁄2 Teaspoon|
|Grated parmesan cheese||1 Cup (16 tbs)|
Shape sausage into 10 patties; brown in hot skillet.
Pour off half the fat; add tomato juice, onions, green pepper, celery and seasonings.
Simmer, covered, for 1 hour.
Remove sausage to hot platter.
Blend flour and 1/4 cup water, making smooth paste; add to tomato juice mixture, stirring constantly, until mix- ture is bubbly and thickened.
Pour sauce over sausage; sprinkle with cheese.
