New Version Of Old Spanish Bean Pot

Ingredients
  Bacon strips 3 , chopped
  Yellow onion 1 , sliced
  Cooked red kidney beans 9 Cup (144 tbs), liquid reserved
  Peach syrup 1⁄2 Cup (8 tbs) (From Canned Peaches)
  Cider vinegar 2 Tablespoon
  Strong coffee 1⁄4 Cup (4 tbs)
  Garlic 1 Clove (5 gm), minced
  Rosemary 1 Pinch
  Bay leaf 1 , crumbled
  Ground cloves 1⁄4 Teaspoon
  Thyme 1 Pinch
  Salt 1 Teaspoon
  Dry mustard 2 Teaspoon
  Cayenne 1⁄4 Teaspoon
  Pumpkin cubes 1 Cup (16 tbs) (1 1/2-Inch Cubes)
  Bacon strips 4
  Brandy 1 1⁄2 Ounce (1 Jigger)
Directions

GETTING READY
1. Preheat oven to 300°.

MAKING
2. In a pan fry bacons till they are crisp.
3. In the drippings add the onions and fry them till they are golden in color.
4. Add onions and bacon with beans.
5. Mix syrup, vinegar, coffee and beans.
6. In a large greased casserole pour the bean mixture.
7. Fold in the pumpkin.
8. Bake for 60 minutes at 300°.
9. Place the bacon strips as toppings. Add beans.
10. Bake 30 minutes more.

FINALIZING
11. Add brandy. Stir from the bottom section.

SERVING
12. Serve with peaches.
