Spanish Black Beans

Ingredients
  Dried black beans 16 Ounce (1 Package)
  Green peppers 3 Medium, chopped
  Onions 2 Large, chopped
  Garlic 2 Clove (10 gm), minced
  Olive oil 1⁄2 Cup (8 tbs)
  Water 5 Cup (80 tbs)
  Ham stock 1 Pound (Meaty)
  Bay leaves 3
  Salt 1 1⁄2 Teaspoon
  White wine vinegar 1⁄4 Cup (4 tbs)
Directions

MAKING
1)Use a large dutch oven, place sorted and washed beans in it.
2)Cover beans with water and let it soak overnight.
3)In a skillet saute green pepper, onion, and garlic in olive oil till tender.
4)Drain beans and stir in vegetables along with ham hock,bay leaves ,salt and white wine vinegar.
5)Let it boil over medium heat and cook for 1 to 1 1/2 hours or until beans are tender, stirring occasionally.
6)Remove ham hock and bay leaves from beans and scrape meat from bone.
7)Further add meat and vinegar to beans and stir well.
SERVING
8)Serve it hot over rice if desired.
