Gazpacho With Pork Rind

Ingredients
  Garlic powder 1⁄4 Teaspoon
  Onion 1 , chopped
  Parsley sprigs 4 , chopped
  Wine vinegar 2 Tablespoon
  Olive oil 3 Tablespoon
  Cayenne pepper 1⁄4 Teaspoon
  Seasoned salt 1⁄4 Teaspoon
  Chicken stock 1 1⁄2 Cup (24 tbs)
  Tomatoes 4 Large, peeled and chopped
  Cucumber 1⁄2 , peeled, seeded and diced
  Sugar free fried pork rinds 2 Tablespoon, crushed
Directions

MAKING
1. In a food processor, place all the ingredients and blend until smooth.
2. Chill the mixture overnight.

SERVING
3. Serve in chilled in soup bowls.
4. Garnish each bowl with some cucumber, pepper, and crushed pork rinds.
