Seville Veal With Crispy Fries

Ingredients
Crispy Fries
Potatoes - 1 lb [500 g], peeled
Thyme - 1 teaspoon [1X5 ml spoon]
Salt and pepper
Veal fillets -1 lb [500 g]
Butter - 2 oz [50 g]
Sauce
Butter - 2 oz [50 g]
Soft brown sugar - 2 oz [50 g]
Fresh orange - 1, rind removed and sliced
Fresh orange juice - 1/2 pint [250 ml]
Directions

MAKING
1) Using a rolling pin, flatten veal fillets till very thin.
2) In a pan, heat butter and cook on both sides. Dab o paper towels and keep hot on serving dishes.
3) For the sauce, in a pan, combine butter and sugar and heat.
4) Add the orange slices and cook for 3 minutes then add in the orange juice.
5) Gently simmer for about 30 minutes.
6) For the fries, grate potato into a bowl and drain out any water.
7) Mix in thyme, salt, and pepper and mix well.
8) In a pan, add enough oil to cover the base.
9) Scoop up dessertspoons (10 ml spoons) of potato into the oil, flatten rounds with back of a spoon till very thin.
10) Fry on both sides for 5-8 minutes.

SERVING
11) Arrange the fries around the veal and add the sauce over the fillets.
