|Tarragon vinegar||1 Tablespoon|

1. To prepare the tomatoes and onion peel and chop the onion very finely, peel and slice the tomatoes.
2. In a pan heat oil and cook the onion and tomato until the onion is tender, but not coloured.
3. Add vinegar and pepper and cook the omelette.
4. Put the filling in the centre and then fold over.
5. Transfer the omelette to a serving plate and serve along with bacon strips if desired.
