Cod A La Catalan
|Bacon||1⁄4 Pound, diced|
|Onion||1 Large, chopped|
|Red pepper||1 , diced|
|Chopped parsley||1⁄2 Cup (8 tbs)|
|Potatoes||1 Pound, boiled and sliced|
|All purpose flour||2 Tablespoon|
|Cooking oil||3 Tablespoon|
Simmer cod for 10 minutes in lightly salted water.
Bone and flake.
In a large saucepan place first the bacon, onion, red pepper, parsley, salt, and pepper.
Cover with alternating layers of potatoes and cod flakes, dusting each layer of fish with a little flour.
Then fill with water to the top layer, cover, and bring to boil.
Add oil, cover, and simmer for another 10 minutes.
Makes 4 servings.
