Spanish Tuna And Olives

Ingredients
  Tuna 1 Can (10 oz)
  Olives 1 Can (10 oz) (Or Jar, Green / Black Variety)
  Butter/Margarine 3⁄4 Tablespoon
  Flour 3⁄4 Tablespoon
  Sherry/White wine 1⁄2 Cup (8 tbs)
  Lemon juice 2 Teaspoon
  Pepper To Taste
  Lemon rind 1⁄2 Teaspoon
  Chopped parsley 1 Tablespoon
Directions

Melt butter in saucepan.
Blend in flour.
Add sherry, lemon juice and pepper.
Cook, stirring constantly until thick and smooth.
Add tuna, lemon rind and olives.
Heat thoroughly.
Garnish with parsley.
Serves 2 or 3.
