Easy Gazpacho

Ingredients
  Chicken broth 4 Cup (64 tbs) (Use Cold)
  Chicken broth 4 Cup (64 tbs), cold
  Olive oil 2 Tablespoon
  Lemon juice/Lime juice 3 Tablespoon
  Tomato juice 2 Cup (32 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Onion/2 green onions 1 Small, minced / chopped
  Onion/2 green onions, chopped 1 Small, minced
  Cucumber 1 , chopped
  Ripe tomatoes 2 Large, peeled and chopped
  Croutons 1⁄2 Cup (8 tbs)
Directions

In blender, combine chicken broth, oil, lemon juice, tomato juice, salt, pepper, and sugar.
Puree until smooth.
Combine with vegetables.
Refrigerate for an hour or so.
Just before serving, garnish with croutons.
Makes 8 to 10 servings.
