Spanish Rice Using Process American Cheese

Ingredients
  Bacon slices 6
  Onion 1⁄2 Cup (8 tbs), chopped
  Green bell pepper 1⁄2 , chopped
  Tomatoes 1 Can (10 oz)
  Celery salt 1⁄2 Teaspoon
  Long grain rice 3⁄4 Cup (12 tbs)
  Processed american cheese 1⁄2 Cup (8 tbs), shredded
  Green bell pepper rings 1⁄4 Cup (4 tbs) (For Garnish)
Directions

MAKING
1. In a 12"X7" baking dish on a microwave rack, place bacon, cover with a white paper towel and microwave at HIGH for five minutes until crisp
2. Measure up about a quarter cup of the drippings into a deep, two quart casserole with lid, crumble the bacon and set aside
3. To the casserole, add green pepper and onions and microwave at HIGH for five minutes; stir after three minutes
4. In a two cup measuring cup, drain the tomato juice and add enough water to it to bring it up to a cup and a half; chop the tomatoes
5. Add tomatoes, tomato juice mixture and celery salt to the casserole, cover and microwave at HIGH for eight minutes until it boils
6. Add rice and stir until moist; cover and microwave at MEDIUM LOW for thirty minutes until tender; keep stirring at ten minute intervals
7. Sprinkle cheese and bacon over it, garnish with rings of green pepper and microwave at HIGH for a minute without a lid until the cheese melts

SERVING
8. Serve as required
