Old-fashioned Spanish Rice
|Bacon slices||2 , cut in small pieces|
|Onion||1⁄2 Cup (8 tbs), chopped|
|Green pepper||1⁄2 Cup (8 tbs), chopped|
|Tomato juice||4 Cup (64 tbs)|
|Rice||2⁄3 Cup (10.67 tbs), uncooked|
1. In a pan saute bacon, onion and green pepper together until bacon is crisp.
2. Place in top of a double boiler and add remaining ingredients.
3. Cook over boiling water for 1 hour, stirring occasionally.
4. Serve the rice spreading over the cooked bacon and vegetables on the top.
