Quick Spanish Rice Meatless
|Olive oil/Peanut oil||3⁄4 Cup (12 tbs)|
|Onion||1 Medium, sliced|
|Green pepper||1⁄2 Medium, dice|
|Cooked rice||1 1⁄2 Cup (24 tbs)|
|Tomato sauce||2 Can (20 oz)|
|Hot water||1 Cup (16 tbs)|
|Cumin powder||To Taste|
|Chili powder||To Taste|
1) In a pan, saute the onion, green pepper and rice in the oil, stir over high heat until brown.
2) Stir in hot water, tomato sauce and season well; blend well, allow to boil and simmer covered for about 20 min, stirring occasionally.
3) Serve immediately.
