Catalan Beans And Eggs

Ingredients
  Dried white haricot beans 1 Pound
  Tomatoes 2
  Onion 1 Large
  Red pepper 1
  Green pepper 1
  Olive oil 1⁄4 Cup (4 tbs)
  Diced cooked ham 1⁄2 Cup (8 tbs)
  Cayenne pepper 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Eggs 4
Directions

Soak the beans in water overnight, then drain.
Put in a saucepan and cover with fresh water.
Bring to the boil and simmer for 30-45 minutes or until the beans are tender.
Drain well.
Peel and chop the tomatoes and onion.
Remove the core, pith and seeds from the peppers and chop.
Heat the oil in a saucepan.
Add the onion and peppers and fry for 5 minutes.
Stir in the ham, tomatoes, cayenne and salt and cook for a further 5 minutes.
Mix in the beans and continue cooking for about 5 minutes, until all the ingredients are heated through.
Turn the bean mixture into an ovenproof serving dish.
Make four hollows and break an egg into each.
Bake in a hot oven (425° F) for 6-8 minutes or until the eggs are cooked.
Serve hot.
