Ingredients
  Leeks 1 Cup (16 tbs), finely chopped
  Carrots 1 Cup (16 tbs), finely chopped
  Potatoes 1 Cup (16 tbs), finely chopped
  Green beans 1 Cup (16 tbs), finely chopped
  Turnips 1⁄2 Cup (8 tbs), finely chopped
  Tomatoes 1 Cup (16 tbs), finely chopped
  Celery 1⁄2 Cup (8 tbs), finely chopped
  Peas 1 Cup (16 tbs), finely chopped
  Parsley 2 Tablespoon, finely chopped
  Butter/Oil 2 Tablespoon
  Garlic 2 Clove (10 gm)
  Oregano 1⁄2 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1. In a large saucepan, heat oil or butter and stir fry vegetables for 10 minutes.
2. Add enough water to cover the vegetables and bring to a boil.
3. Reduce the heat to low and simmer for 2 hours; add more water if required.

FINALISING
4. In a sieve, put the vegetable mixture and press to make puree.
5. Reheat before serving.

SERVING
6. Serve mixed vegetable soup in soup bowl and top with a tablespoon of butter.
7. Season and serve.
