Spanish Meat And Bean Stew
|Dried red kidney beans||1 1⁄4 Cup (20 tbs)|
|Bacon piece||4 Ounce|
|Garlic||1 Clove (5 gm)|
|Garlic sausage||4 Ounce|
|Diced cooked ham||1⁄2 Cup (8 tbs)|
|Diced cooked beef||1 Cup (16 tbs)|
|Diced cooked tongue||1⁄2 Cup (8 tbs)|
|Black pepper||1⁄2 Teaspoon|
Soak the beans in water overnight, then drain.
Put the bacon in a saucepan with the beans, salt, water and bay leaf and bring to the boil.
Simmer for 1 hour, or until the beans are softened.
Meanwhile, peel and finely chop the onion.
Finely chop the garlic.
Remove pith, core and seeds from the peppers and cut into strips.
Slice the garlic sausage.
Remove the bacon from the pan and dice.
Return to the pan with the onion, garlic, ham, beef and tongue.
Simmer for 15 minutes, then stir in the pepper strips and sausage slices.
Season with the black pepper and simmer for a further 15 minutes.
