Tropical Gazpacho

Ingredients
  Banana 1
  Water 1 Tablespoon
  Apricot nectar/Papaya nectar 1 1⁄2 Cup (24 tbs)
  Pineapple juice 1 1⁄4 Cup (20 tbs)
  Chopped pineapple 1 Cup (16 tbs)
  Chopped mango 1 Cup (16 tbs)
  Peeled seeded chopped cucumbers 1⁄2 Cup (8 tbs)
  Chopped plum tomatoes 1⁄2 Cup (8 tbs)
  Jalapeno pepper To Taste, minced
  Chopped fresh cilantro 2 Tablespoon
  Shredded coconut 2 Tablespoon, toasted
Directions

In a large bowl, mash the banana and water until smooth.
Whisk in the papaya nectar or apricot nectar and pineapple juice.
Stir in the pineapple, mango, cucumbers, tomatoes, peppers, and cilantro.
