Basque Style Turkey Tenderloins
|Olive oil||1 Tablespoon|
|Dried basil leaves||1 Teaspoon|
|Garlic||2 Clove (10 gm), minced|
|Condensed french onion soup||10 1⁄2 Ounce (1 Can)|
|White wine||1⁄4 Cup (4 tbs)|
|Turkey tenderloins||2 Pound, diagonally sliced 1/2 inch thick|
|Pitted prunes||1⁄2 Cup (8 tbs)|
|Dried apricots||1⁄2 Cup (8 tbs)|
In 10-inch square casserole, combine olive oil, basil and garlic.
Microwave at High for 1 minute.
Stir in soup and wine.
Add turkey, prunes and apricots, stirring to coat.
Microwave at 70% (Medium High) for 18 to 22 minutes, or until turkey is cooked through and no longer pink, stirring twice.
Remove turkey and fruit with slotted spoon to platter.
