Baked Fillets Spanish Style
|Sliced onion||1 Medium|
|Fat/Salad oil||3 Tablespoon|
|Canned tomato juice||1 1⁄4 Cup (20 tbs)|
|Seeded green pepper||1⁄2 , minced|
|Pepper||1 Dash (Speck)|
|Granulated sugar||1⁄2 Teaspoon|
|Fish fillets||2 Pound|
Saute onion in the fat until tender; stir in flour.
Add all remaining ingredients but fish and simmer, stirring constantly, until thickened.
Remove bay leaf and clove.
Arrange fish fillets in a shallow baking dish and cover with sauce.
Bake uncovered in a moderate oven of 350°F for 30 min or until the fish flakes readily.
