Finely chopped red onion/Finely chopped white onion
1⁄4 Cup (4 tbs) (Use Mild Variety)
1 Small, peeled, pitted, and diced
1⁄4 Teaspoon, crumbled
Olive oil/Salad oil
1 1⁄2 Tablespoon
2 Cup (32 tbs)
In a serving bowl or pitcher, combine cucumber, onion, avocado, oregano, oil, and vinegar.
Pour in tomato juice.
Cover and chill thoroughly.
Add salt and pepper to taste.
Add ice cubes to individual servings, if you wish.
Pass lime wedges to squeeze over.
