Spanish Sauce With Ham
|Butter||1 Cup (16 tbs)|
|Chopped onion||1 Cup (16 tbs)|
|Flour||1 Cup (16 tbs)|
|Salt||1 1⁄2 Tablespoon|
|Strained tomato juice||2 Quart|
|Cooked chopped ham||1 1⁄2 Cup (24 tbs)|
|Chopped celery||1 1⁄2 Cup (24 tbs)|
|Chopped carrots||1 Cup (16 tbs)|
Melt 1/2 cup butter, then add the onion and saute until lightly browned.
Melt remaining butter and add to onion mixture.
Blend in the flour, salt, cayenne and pepper.
Add the tomato juice gradually, stirring constantly.
Add the ham, celery and carrots and bring to a boil.
Pack immediately into hot sterilized jars, leaving 1 inch at the top.
Process at 10 pounds pressure for 50 minutes.
May be served over rice or spaghetti.
