Classic Gazpacho Soup
|Garlic||1 Clove (5 gm), mashed|
|Olive oil||1⁄4 Cup (4 tbs)|
|Wine vinegar||3 Tablespoon|
|Cold water||6 Cup (96 tbs)|
|Ripe tomatoes||3 , peeled and chopped|
|Green pepper||1 Large, shredded|
|White onion||1 Small, sliced very thin|
|Cucumbers||2 , diced or sliced|
|Dry french bread chunks/Italian bread chunks||1 Cup (16 tbs) (Small Chunks)|
This is a classic Spanish soup, though there are almost as many ways of making it as there are Spanish and Portuguese regions.
This is a typical recipe.
Mix the ingredients in a large wooden bowl, in the order given.
Mix well after each addition.
At the end drop the chunks of bread on top and chill the soup thoroughly.
Serve very cold.
