An easy Spanish stew, the Cocido is absolutely delicious. Tickle your taste buds with this refreshing stew. It is all about the genuine Spanish flavor. So do not procrastinate, try this Cocido recipe.
Ingredients
  Flour 1⁄3 Cup (5.33 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Bone in lamb 4 Pound, cut in 2 inch pieces
  Olive oil 3 Tablespoon
  Onions 2 Medium, sliced
  Garlic 2 Clove (10 gm), minced
  Dry red wine 1 1⁄2 Cup (24 tbs)
  Water 3 Cup (48 tbs)
  Canned tomatoes 28 Ounce
  Tomatoes 28 Ounce
  Beef bouillon cubes 2
  Potatoes 6 , cut into cubes
  Carrots 6 , cut
  Zucchini slices 2 Pound
  Zucchini 2 Pound
  Pimento stuffed olives 1 Cup (16 tbs)
Directions

Stage1-Place flour, salt, pepper in paper bag; add lamb, shake.

Stage2-Heat oil in heavy pot, add lamb, cooking until well browned on all sides. Remove from pot.

Stage3-In same pot, saute onions and garlic in drippings until tender.

Stage4- Return lamb; add wine, water, tomatoes, and bouillon cubes.

Stage5-Cover, simmer 90 minutes, stirring occasionally.

Stage6-Add potatoes and carrots, cook 15 minutes.

Stage7-Add zucchini and olives, cook 30 minutes longer.
