Chunky Tomato Gazpacho
|Tomatoes||6 , peeled, seeded and chopped|
|Chopped seeded cucumber/Sweet green pepper||1 Cup (16 tbs)|
|Green onions||4 Small, chopped|
|Chopped fresh basil/Parsley||2 Tablespoon|
|Chilled tomato juice||2 Cup (32 tbs)|
|Olive oil||1⁄4 Cup (4 tbs)|
In large glass bowl, combine tomatoes, cucumber, green onions and basil; stir in tomato juice and oil. Season with salt and pepper to taste. Refrigerate until chilled.
