1 clove garlic, crushed
2 tablespoons corn oil
3 small potatoes, boiled and chopped
2-3 tablespoons cooked peas
1 canned pimento, chopped
1 tomato, peeled, seeded and chopped
1/2 teaspoon Tabasco
Pinch of mix
Mix all the vegetables, including the onion and garlic, together in a bowl.
Pour 1 tablespoon oil into the omelette pan, add the vegetables and heat thoroughly.
Beat the eggs lightly, add Tabasco and seasoning and pour into the pan over the vegetables.
