Southern Style Squash Andorra
|Onions||2 Small, sliced and separated into rings|
|Crookneck squash||3 Medium, cut into 1/4-inch slices|
|Frozen whole okra||10 Ounce, thawed and cut into bite-size pieces (1 Package)|
|Garlic||1 Clove (5 gm), minced|
|Dried thyme||1⁄2 Teaspoon, crushed|
|Lemon juice||1 Tablespoon|
|Grated cheddar cheese||1 Ounce (1/4 Cup)|
Place onion slices, squash and okra on 24 x18-inch piece of heavy-duty foil.
Dot with butter.
Sprinkle with garlic, salt, pepper, thyme and lemon juice.
Fold and seal foil edges tightly.
Grill packet, on covered grill, over medium-hot briquets 25 to 30 minutes or until tender, turning packet over once.
