Authentic Spanish Rice
|Broiled lean ground beef||8 Ounce|
|Stewed tomatoes||2 Cup (32 tbs)|
|Canned green chilies||1⁄4 Cup (4 tbs), rinsed and diced (Drained)|
|Tomato paste||2 Tablespoon|
|Chili powder||1⁄2 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
|Ground black pepper||1 Dash|
|Long grain white rice||3 Ounce|
|Frozen whole kernel corn||1⁄2 Cup (8 tbs)|
|Chopped onion||2 Tablespoon|
1. Spray large nonstick skillet with nonstick cooking spray; add beef, tomatoes, chilies, tomato paste, chili powder, cumin, salt, and pepper. Bring to a boil; lower heat.
2. Stir in rice, corn, onion, and 1 cup plus 2 tablespoons water. Cover and simmer until rice is tender, about 35 minutes.
