1 In a large frying pan, heat oil.
2 Saute potato and onion, stirring occasionally, until both are cooked but not brown.
3 In a bowl, whisk eggs with pepper.
4 Pour into the pan, spreading evenly.
5 Cover the pan and lower the heat.
6 Allow the omelet to cook for about 10 minutes.
7 Place a plate over the frying pan and invert the omelet.
8 Return it immediately to the pan and brown the other side.
9 Transfer to a serving dish and serve at once.
