Basque ShepherdS Pie

Ingredients
  Potatoes 3 Medium, peeled and thinly sliced
  Bacon slices 4
  Sliced green onion 2 Tablespoon
  Eggs 4
  Milk 2 Tablespoon
  Finely snipped parsley 1 Tablespoon
  Salt 3⁄4 Teaspoon
  Dried thyme 1⁄8 Teaspoon, crushed
  Pepper 1 Dash
Directions

In 8x1 1/2-inch round baking dish, combine potatoes and water to cover.
Cook, covered, at HIGH for 10 to 12 minutes or till tender.
Drain and remove from dish.
In same dish, cook bacon, covered with paper toweling, at HIGH for 31/2 to 4 minutes or till crisp.
Drain, reserving 2 tablespoons drippings.
Crumble bacon and set aside.
In same dish, cook onion in reserved drippings at HIGH for 1 minute or till tender.
Gently stir in potatoes.
In small bowl, beat together eggs, milk, parsley, salt, thyme, and pepper; put potatoes top.
Cook, uncovered, at MEDIUM HIGH (7) for 5 1/2 minutes.
