Ingredients
  Butter 2 Teaspoon
  Carrot 1 Small, chopped
  Onion 1 Small, chopped
  Stalk celery 1 , chopped
  Bacon slice 1 , cut into pieces
  Beef stock 500 Milliliter (2 Cups)
  Pureed tomatoes 15 Milliliter (1 Tablespoon)
  Mushrooms 125 Milliliter, quartered (1/2 Cup)
  Bay leaf 1
  Parsley sprigs 3
  Kneaded butter 2 Tablespoon (Beurre Manie)
  Salt To Taste
  Pepper To Taste
Directions

–  In a saucepan, melt butter and saute carrot, onion, celery and bacon without browning.
–  Pour beef stock over vegetables and simmer for 15 minutes.
–  Add pureed tomatoes, mushroom quarters and herbs. Season with salt and pepper and simmer for 15 minutes.
–  Add kneaded butter and mix with wire whisk or beater. Return to saucepan and simmer until sauce thickens. Pour mixture through sieve. Garnish with finely chopped mushrooms and serve.
